Nutrition: Turkey Spinach Meatloaf
Ingredients:
2 Lbs. Lean Ground Turkey (white meat)
1/2 cup skim milk
1 Egg
2-4 slices whole grain bread, torn
2 TBS. Parmesan cheese
1-2 Tsp. ground pepper
3-4 Handfuls baby spinach leaves
1/2 cup diced onion
1-2 TBS. Olive oil
Sauce Mix:
6 TBS.ketchup
3-4 TBS. hot-sauce
1 TBS. brown sugar
PREPARATION:
Preheat oven to 375 degrees, line baking sheet with lightly sprayed aluminum foil
1. Mix turkey, milk, egg, bread, parmesan and pepper
2. Heat olive oil in a skillet, add onions and spinach, sauté for a few minutes, add mixture to the turkey mix
3. Fill a 1 cup measuring cup with the turkey mix to make into individual loaves, should make 4-6
4. Top the loaves with a generous amount of the sauce mix
5. Bake for 35 minutes
