  • Tofu Dish Recipe

    Tofu is a great source of protein and easy to throw into many recipes. Substituting tofu for a meat product is simple too. Tofu takes on the taste of whatever it is mixed with. Soups, sauces, and other dishes as well.

     

    Tofu & Veggies in Peanut Sauce

    Making a quick, delicious and well balanced meal. Made up of sautéed vegetables, tofu, and a savory peanut sauce. Serve over your favorite rice.

    Ingredients:

    1 small head of broccoli (chopped)

    1 small red bell pepper (chopped)

    5 fresh mushrooms (sliced)

    1 lb. firm tofu (cubed)

    1/2 cup of peanut butter

    1/2 cup hot water

    2 tbsp vinegar

    2 tbsp soy sauce

    1 & 1/2 tbsp molasses

    1 tbsp peanut oil

    ground cayenne pepper to taste

     

    Directions:

    Heat oil in a large skillet or wok at medium-high heat.                                                                                            Sauté broccoli, red bell pepper, mushrooms, and tofu for 5 minutes.

    In a small bowl, combine peanut butter, hot water, vinegar, soy sauce, molasses, and cayenne pepper. Pour this mixture over the vegetables and tofu. Simmer 3-5 minutes, or until vegetables are tender crisp.

    Serve over rice.
